I've become a pro at making peant brittle. If you've made it before then you know how hard and time consuming this candy can be! I kinda got a little bored with the "peanut" part of brittle lol. SO I experimented; I used cashews and mixed nuts as well. Results? Everyone LOVED the cashew brittle 10x more than the peanut brittle.

I would recommend trying this little spin on peanut brittle. Its amazing!

Which by the way, if you put the nuts in AFTER the pot is off the stove, it wont matter if the nuts are cooked or not

I will print this recipe out! And I like the idea of coconut...many thanks Mr. Rax! I don't have candy thermometer but I can use the cold water method right? Don't see why not?

I've made a lot of nut brittle in my lifetime and I'm afraid that I've always just used the "wing it" method ... first I prep the cookie sheet (the kind of sheet with sides) by smearing it with butter and sprinkling liberally with whatever nuts I've chosen ... then, in a large skillet, I've heated plain white sugar on low-medium until it melts ... add a tiny bit of baking soda to make the melted sugar puff up some ... and pour over the nuts in the cookie sheet ... haven't made this concoction since Christmas 2015 !!! I should do that again!!
