Italian Ministrone
Posted: 2/8/2009 7:59:58 PM
Well actually...

There is no set recipe for minestrone, since it is usually made out of whatever vegetables are in season. It can be vegetarian, contain meat, or contain a meat-based broth (such as chicken stock). The word "minestrone" has become a synonym for "hodgepodge."

Minestrone is one of the cornerstones of Italian cuisine, and is just about as common as pasta on Italian tables.

2/3 cups lemon juice
1 certo pouch
add vinegar, sugar and peppers to a pot on high and bring to a boil and reduce heat and let simmer for 5 minutes. stirring occasionally to avoid burning.

creamed potatoes and peas
Posted: 2/3/2009 3:34:57 PM
I don't have ma's recipe but this one is similar..

creamed potatoes and peas
4 medium red potatoes, cubed
1 (10 ounce) package frozen peas
1 teaspoon sugar
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon white pepper
1 1/2 cups milk
2 tablespoons minced fresh dill

DIRECTIONS
Place potatoes in a saucepan; cover with water and cook until tender.
Cook peas according to package directions, adding sugar.
Meanwhile, melt the butter in a saucepan; add flour, salt and pepper to form a paste. Gradually stir in milk. Bring to a boil; boil for 1 minute. Add dill; cook until thickened and bubbly. Drain potatoes and peas; place in a serving bowl. Pour sauce over and stir to coat. Serve immediately.

sandwichm maker
Posted: 2/3/2009 12:15:42 PM
I suggest a no stick spray for this one too..

Monte Cristo
Ingredients:
18 slices bread
butter
6 slices ham
6 slices turkey or chicken
12 slices Swiss or Gruyere cheese
a little mustard and mayonnaise, if desired
3 eggs
1/3 cup milk
1/8 teaspoon salt
Preparation:
For each sandwich use 3 slices of bread. Butter one side of bread first, then cover with a slice of ham and a slice of turkey or chicken. Butter both sides of the second slice of bread and spread with a little mustard or other dressing, if desired. Place on top of turkey or ham slice and top with 2 thin slices of cheese. Butter third slice for top; press sandwich lightly and trim crusts. Cut into halves diagonally and secure with toothpicks.
Beat eggs with milk and salt. Dip sandwich halves into the egg mixture and fry on a hot skillet or griddle in butter or margarine. Brown on all sides, adding more butter when necessary. Remove toothpicks before serving.
Makes 6 sandwiches, 12 cut triangles, to serve 4.

Red Pepper Jelly
Posted: 2/3/2009 11:01:52 AM
A friend gave me a bottle of homemade Red Pepper jelly - beside's the cream cheese and crackers appetizer, any suggestions for some yummy uses?

Here's one I did find..
Pepper Jelly Glaze..

Cooking Time: 45 min to an hour
Servings: 3
Preparation Time: 10 min
3 boneless/skinless chicken breasts
3 Tbl. Pepper Jelly
3 Tbl. Grey Poupon mustard
3 Tbl. honey
optional: A couple dashes of hot pepper sauce, for those who like a little heat.

Pre-heat oven to 350F.
Grease or spray an oven=proof casserole, large enough to accomodate chicken.
Wipe chicken dry and arrange in the casserole.
In a small bowl, spoon in jelly and microwave about 25 seconds, just to warm enough to make mixing easier.
Add mustard and honey (and hot sauce, if used) to the warmed jelly, and stir to combine.
Pour mixture over the chicken breasts, coating all sides.
Bake for 45 minutes to an hour, turning twice during baking to glaze and brown.
Remove and place on a platter to serve, pouring the thickened glaze over the chicken to serve.

Much less winded, Got this from mom, She makes it often, and it is good....

Hot bacon dressing
1 c. water
1 c. vinegar
1 tsp. salt
3 eggs, beaten
1 c. sugar
1/4 c. flour
1 tsp. dry mustard
2 hard boiled eggs, diced
4 slices bacon, fried and crumbled

In a small saucepan, bring the water, vinegar and salt to a boil. Mix the eggs with the sugar and flour, then add to the saucepan. Stir until the mixture thickens, about 5 minutes.
Remove from heat and add the mustard, eggs, and bacon crumbs. Serve hot, tossed with a crispy salad. This dressing can be refrigerated and reheated before serving. Makes 2 1/2 cups.

questions about no contact rule
Posted: 8/2/2008 1:34:05 PM
An ex GF, Accused me of driving by her house, I was in her town buying a part for my boat, Guess someone saw me, I was no where near her house but it is a smalll town. After we broke up I sent the odd email, I was hurt, But eventually gave up, I would just forward the odd joke occasionally, Got Shit fer that too, So no contact since, Not worth the hassel and threats, Got ridiculas for no reason.. Spoke to her friends and was told she was'nt worth the hassle.

If you happen to hook up with an ex All the best But don't count on it and don't put yourself through the wringer hoping...

Chili vs. Goulash
Posted: 5/4/2008 6:30:30 AM
Got this from my ex, She's czech..

Goulash

In a pot
Brown 2 finely chopped onions
Once browned add a teaspoon of red paprika
Add a pound of stewing beef or whatever your fancy
Salt the meat to get the juices out
Cook on high at first then put a lid on it and simmer
Add enough water to cover the meat
In a jar shake 1/2 a cup of water and 1/2 cup of flour, may want to adjust that abit
Add to the pot with a cut up tomato and green pepper and whateverelse you might like in it.
Add some beef boulion for more flavor.

Serve with potatoe or regular dumpling's, I usually have it with pasta.
