UR MEXICAN caserole sounds delicious.Do U sdd different seasonings tk chicken? I also love bacon chicken quesadillas.

We 'd all like U to Share UR creamy sauce ñ anaheim peppers ñ anything else U make or UR family recioes.

Lasagna Spanish Style Delicious Easy
Serves 12
2 lbs. ground beef
1) 16 oz. refried beans
1) 4 oz. gr. chilies or *fresh roasted better
1 envelope taco seasoning
2 Tbsps. salsa hot or mild
12 ozs. lasagna noodles uncooked*
4 c. Colby Monterey Jack cheese
shredded divided
1) 16 ozs. salsa mild
2 c. water
2 c. or 16 ozs. sour cream
1) 2 1/4 ozs. black ripe olives drained
3 green onions chopped
1 tomato Roma or plum medium size
chopped optional
* uncooked noodles can be be cooked day a head to safe time ñ using fresh roasted green chiles choped makes a huge difference in taste

Preheat oven 350°F.
Using large skillet - cook ñ stir meat till no longer pink - drain. Stir in beans - chilies - taco seasoning with meat after draining meat - hot salsa.
Use a greased 9"x 9" or 13"x9" baking dish - layer a third of noodles ñ meat mixture. Sprinkle with 1 cup cheese. Repeat layers twice.
Combine mild salsa ñ water - pour over top. Cover - bake 1 hour or until heated through. UNLESS used pre cooked noodles ñ cook less time. Top with sour cream - olives - onions - tomatoes if desired ñ remaining cheese or place those items to side for those who want to put their own sidez on
Bake uncovered 5 minutes. Let stand 10 to 15 minutes before cutting to set.

~Refreshing Corn Salad~
3 c. corn frozen defrosted
1 red bell pepper chopped
1 c. red onion chopped
1) 15 oz.black beans. drain rinse well
1 zucchini medium chopped
cilantro leaves a large bunch chopped

Dressing~
3 Tbsps. olive oil or light tasting oil of your choice
juice of 2 limes
¼ tsp.  garlic granular
1 tsp. ground cumin powder
 Kosher salt ñ black pepper to taste

Place veggies in a large serving bowl ñ lightly toss ñ add in chopped cilantro - toss again.

Whisk or shake dressing ingredients together. Adjust seasonings to UR taste - add dressing to corn salad. Lightly toss to coat.

Poblano That goes with Anything Came Up with this to use up leftover Poblano Enjoy Dovelett

1 poblano seeded cut in thin rings again in half
1 onion large cut as poblano pepper
2 garlic cloves dice very fine
Into a skillet with little butter ñ oil
Cook till almost soft

Add~
Skirt steak or any U like cut thin long strips
Cilantro half a handful can use parsley chop leaves only
1 tsp. Mexican oregano or more to UR taste I use more
1 to 2 tsps. level Better Than Chicken Base go slow ñ taste
Mix well if needed add touch more butter
Season all with salt ñ pepper ñ touch of red crushed pepper flakes optional

When almost cooked ñ tender add~
Add thick piece of smoked gouda cheese with a touch of Brie cheese
Stir ñ melt in cheese
Add a squirt or two of lime juice stir ñ taste adjust seasoning if needed

Last thing to go on top - before serving is provolone cheese or mozzarella is optional

This goes on a hoggie or bello bun toasted slightly or over cooked rice
Easy ñ quick to make I came up with this when I had a left over poblano can use in quesadilla also.


~Summer Avocado Toast found on web
Serves 6

1 cob corn*
1 avocado large peel remove seed sliced
1 tomato sliced
basil chop thin strips
salt ñ black pepper
lime juice
6 slices toasted bread
*options ~ cheese salsa

Remove husk from corn - place it on a grill - medium heat. Rotate corn all sides ñ cooked through - about 15 minutes - cool - cut kernels off. Cut avocado in half - remove seed - scoop out avocado, place in a medium sized bowl - smash with a fork. Add salt - squeeze lime juice - mix with a spoon. Spread avocado onto toast - top with a thin slice tomato - *small handful of grilled corn or salsa or cheese beans - chopped herbs - sprinkle top with salt ñ pepper.

Note~ use any veggie if U don’t like* corn or leave it off – beans work also


~Tex Mex Tater Tots Casserole Easy

4 c. Tater Tots frozen
1) 16 oz. Hunts stewed tomatoes

1 small onion diced
2 garlic cloves dice fine
1/4 tsp. Mexican oregano powder
Cilantro leaves diced or use parsley ½ handful
1 c. sour cream
2 Tbsps. heavy cream or milk
4 Tbsps. green chilies chopped roasted or can or to UR taste can add
serrano also
salt to taste
1/2 c. Cheddar cheese

Preheat oven 375° F.
Place frozen tots into shallow 1½ quart shallow baking dish - add onion - tomatoes ñ oregano - now place in dish with tots - onions ñ mix gently.
Using small bowl mix stir sour cream - heavy cream or milk - chiles - salt together. Spoon over top. Sprinkle with cheese. Bake 25 minutes

Cooking with Lentils or Beans

4 to 4 1/2 c. green beans fresh wash drain
2 to 3 strips bacon
1 shallot or 1/4 c. purple onion chop fine
3 To 4 garlic cloves chop fine
1 to 2 red chili thinly sliced or 1/2 tsp. dried crushed chili or to taste
1 red bell pepper chop fine optional

Sauce
1/2 tsp. shrimp paste
3 Tbsps. soy sauce
2 tsps. dark soy sauce
1 T. fish sauce more to taste
1/2 T. brown sugar

Using a cup - stir well all sauce ingredients together n dissolve sugar - set aside.
Use large skillet or wok fry bacon till cooked. Remove from heat pour off 1/2 thefat.
Start beans by snipping off ends cut into 2" to 3" lengths. prepare other ingredients.
Remove bacon ñ scissor cut into all - stir - serve.

Smothered Mexican Chicken
Easy Flavorful Baked Chicken
Serves 6

3 chicken breasts cut in half length wise
1) 14 oz. fire roasted diced tomatoes
1) 3 oz. diced green chiles or use fresh roasted
1) 14 oz. black beans drain rinse well
1½ tsps. chili powder
1 tsp. dried oregano
1/4 tsp. gr. coriander
1/2 tsp. gr. cumin
salt to taste
1 c. Monterey Jack cheese shredded
avocado ñ sour cream for garnish

Preheat oven 350 °F.
Grease a rectangular baking dish with non stick cooking spray.
In a bowl add tomatoes - chiles - black beans - chili powder - oregano - coriander - cumin with salt.
Spread half the mixture on the bottom of a greased pan. Place chicken breasts on top. Season chicken with salt ñ pepper. Spoon remaining tomato ñ black bean mixture on top.
Sprinkle with cheese. Cover with foil - bake chicken till cooked through - cheese melts about 30 to 35 minutes.
Serve with sliced avocado ñ sour cream.

~New Mexico Red Chile Sauce with Honey
Makes 4 cups sauce

24 dried red New Mexico chiles
4 c. beef stock chicken stock or water
2 Tbsps. bacon grease lard or vegetable oil
2 garlic cloves minced
2 Tbsps. flour or arrowroot powder
1 tsp. Mexican oregano
Salt to taste
touch of cumin
1 tsp. allspice
honey to taste or use Mexican chocolate optional

Roast chiles on both sides as usual - till they soften slightly. When chiles are cool enough to handle - remove stems ñ seeds.
Remove chiles to a deep pan - pour stock or water over them. Bring mixture to boil - reduce heat - simmer about 10 minutes. Remove pan from heat - cool about 15 minutes.
Working in batches - puree chiles with their soaking liquid.
In large skillet - medium heat - melt bacon grease or lard - or heat oil. Add garlic with arrowroot or flour ñ cook - stir till mixture becomes golden. Add pureed chiles - stir quickly while sauce bubbles ñ spatters. Reduce heat - add all other seasonings simmer 5 minutes. Adjust to taste if needed. If sauce is a little bitter ñ mellow it with about a teaspoon of honey - to taste.
Note~ replace honey with chocolate if U like.
Freeze in containers.

~Queso Fundido Spiked with Tequila
1/3 c. poblano pepper seeded chop can use other chile peppers
1/3 c. onion chop
1 T. olive oil
1/4 c. tequila
1½ c. queso quesadilla (Chihuahua or Monterey Jack cheese shredded
1 T. flour
1/3 c. tomato chopped fine
1 T. cilantro leaves chop fine

Preheat oven 350 ° F.
In a skillet add ñ cook onion in oil till soft – remove from heat - slowly add tequila – return to heat – simmer uncovered about 30 seconds or most tequila has evaporated ñ veggies are still moist.
Spoon mixture in bottom of a 6 or 7” ovenproof skillet or a 2 cup au gratin dish. Medium bowl toss cheese with flour ñ sprinkle cheese mix over veggies.
Bake uncovered about 10 minutes or cheese is just melted. Sprinklw with diced tomatoes ñ cilantro. Server with corn chips or warm tortillas topped with cooked chorizo.

~Tomatillo Sauce ñ Pork Stew Slow or Pressure Cooker

1½ lbs. tomatillos husked rinsed ñ halved
2 to 4 serrano de-stem ñ seeded or to UR amount of heat
1/2 onion white quartered
2 garlic cloves dice
1 corn tortilla chopped
1/2 c. chicken broth
1/4 tsp. fennel seeds crushed
1 ¼ lbs. pork stewing meat lean in 1½” pieces browned well cook/1 T. oil

Garnish
Cilantro leaves or parsley leaves
1/2 to 3/4 c. queso fresco or feta cheese crumbled
Hot cooked rice optional

Preheat broiler - placing 1st four items on foil lined baking sheet – broil – turn often 5 to 7 minutes or till they all start to char. Remove items to cutting board ñ chop when cooler.

Sauce~ place the above charred veggies into a blender ñ add tortilla with some broth ñ fennel – cover – blend till almost smooth.
After browning meat – add to 5 qt. slow cooker HIGH 6 to 8 hours or pressure cooker High pressure – 40 minutes. Don’t forget to add sauce.
Season to taste with salt ñ remove to a serving dish ñ sprinkle cilantro or parsley ñ cheeses. Serve with rice if U like

~Casserole Stuffed with Choice of Salsa Slow Cooker Easy
2 poblano peppers fresh roasted
1 c. or 5 ozs. Cotija cheese crumbled or use feta
1/2 c. or 2 ozs. Monterey Jack cheese shredded
3 eggs separated
1/4 c. beer
green or red salsa

Preheat oven 450 °F.
Cut stems from poblano ñ scoop out seeds from the top – leaving them intact. Put peppers on covered foiled lined baking sheet – roast till charred all over well. Remove from oven ñ wrap foil around to enclose – about 15 minutes ñ peel skins off.
`Mix cheeses together ñ stuff the peppers. Coat 4 qt. slow cooker with non cooking spray oil. Place peppers in cooker.
`Using a large bowl – beat egg whites with electric mixer on high till soft peaks ñ tips curl. Another large bowl – whisk till smooth - egg yolks – beer ñ 1/2 tsp. salt. Fold appox. 1/4 the egg whites into yolk mixture to lighten. Fold remaining egg whites into yolk mix. Pour egg mixture over pepper in slow cooker. Cover on HIGH 1½ to 2 hours. Serve with red or green salsa.

Green Salsa~
6 tomatillos husked – 2 to 4 serrano peppers – 3 garlic cloves large – 1/8 c. onion chopped in enough water to cover till tomatillos are soft. Drain ñ blend till smooth. Add cilantro leaves or parsley ñ salt to taste. Little over 1 c. ñ double or triple recipe.

Red Salsa ~ buy or make using 4 pasilla dried peppers roasted ñ peel removing stems ñ seeds – place in a bowl with 1 c. orange juice – 2 or 4 garlic cloves peeled – 1/4 tsp. salt. – let sit about 45 minutes till peppers are soft – than into blender till smooth. 1 c. Double or triple recipe.

Enchilada Fried Wings

Chicken wings deep fried or fried drained

Place wings in large bowl after cooking ñ draining them – toss well to coat with brought or homemade enchilada sauce or green sauce. Eat as is or place them in oven to let sauce bake in.

Place wings on platter ñ add the below ~
1 c. Monterey Jack cheese shredded
4 ozs. gorgonzola cheese crumbled
5 green onions ñ some stems chop fine
1/2 c. cilantro or parsley leaves chop coarse

Side bowl of x sauce on table with Buffalo wing sauce in another small bowl for those who really want more fire.

EZ BBQ ribs falling off the bone

Pineapple Ribs ñ Sticky
1) 2 to 3 lbs. rack of ribs (use pork loin ribs
3½ c. pineapple juice reserving ¼ c. for later
1½ c. brown sugar
1) 16 oz. bottle BBQ sauce ( Famous Dave's Rich ñ Sassy sauce or any.

Spray slow cooker with non stick cooking spray (or use a slow cooker liner to make clean up a breeze. Nothing if using pressure cooker
Take a slab of ribs - defrosted - cut into individual slabs about 2 to 3 ribs each. Throw ribs into slow cooker or pressure cooker or boil them first to remove fat..
Mix pineapple juice with brown sugar together pour over ribs. Place lid back on slow cooker cook on HIGH 7 to 8 hours or LOW 10 to 12 hours. Lock down if using pressure cooker.
After they are done in a slow cooker - use tongs to gently pull them out (they will literally fall apart when you touch them. Turn grill on medium heat. While grill is warming up - mix together A bottle of BBQ sauce ñ remainng ¼ cup pineapple juice.
Place ribs gently on the grill - brush with BBQ sauce. Turn ribs twice - slathering with more sauce each time ( can't have enough sauce - takes about 10 to 15 minutes to glaze over (as soon as that sauce starts to turn sticky - know they are done. Or High pressure cook 45 minutes - remove to grill or broiler to glaze
Serve immediately.
Can use use beef short ribs also

1st one~
Canned Beans ñ Smoky BBQ Beans
2 cans pork ñ beans
1/2 c. ketchup
1/2 c. barbecue sauce
1/4 c. brown sugar
1 T. yellow mustard
1 T. worcestershire sauce
3 drops liquid smoke mesquite or UR choice
1/4 tsp. garlic granular
1/4 tsp. pepper
6 slices thick cut

2nd one~
Jalapeño ñ Northern Beans
1 lb. great northern beans dried
1 lb. thick cut bacon chopped
1 onions large chopped
1 jalapeño chilies chopped
1/4 c. tomato paste
1/2 c. dark brown sugar
1/4 c. molasses
vegetable broth
1/4 tsp. cayenne pepper
salt ñ pepper to taste

3rd one~
Spicy Beer Beans~
3 bacon slices smoked diced
3/4 c. chopped onion
1 c. BBQ sauce. use your favorite
1 c. beer
2 Tbsps. light molasses
11/2 Tbsps. Dijon mustard
11/2 Tbsps.brown sugar
1 T. worcestershire sauce
1 T. soy sauce
1 T. chipotles in adobo minced
15 ozs. great northern beans drained
15 ozs. pinto beans drained
15 ozs. light red kidney beans drained

Buffalo Wings

French Chicken Wings Easy
24 appetizers

1 c. French dressing
1/2 c. dark corn syrup
1) 1.4 oz. pkg. French onion soup mix
1 T. Worcestershire sauce
2 to 3 lbs. chicken wings or drumettes fresh or frozen

Heat oven as high as it goes.

Mix together 1st four ingredients in a 13” x 9” baking pan. Add chicken wings - toss to coat. Bake wings 20 minutes or 30 minutes for frozen wings. Turn wings as needed - bake an additional 5 minutes or a little longer for crispier wings. Serve hot or at room temperature with favorite dip or eat as is.

~Spicy Sweet Tart Hot Wings
8 chicken wings - fresh fried first drain on paper towels ñ pour this sauce over
1/4 c. ketchup
2 Tbsps. vegetable oil
1 T. honey
4 Tbsps. hot pepper sauce - or to taste
1/2 tsp. red pepper flakes - crushed
1/2 tsp. salt
2 Tbsps. vinegar or more for that tart taste
Can bake with the sauce except do not add vinegar in till after baking ñ toss vinegar over the sauce ñ wings. It glazes when baking, Sometimes I throw in micro just to remove move grease ñ make crispier after baking with sauce ñ vinegar added.

~Sweet Garlic Glazed Boneless
1/2 c. soy sauce
3 Tbsps. rice vinegar
1 tsp. fresh lime juice
1 tsp. honey
1/2 tsp. crushed red pepper flakes
2 tsp. green onions - diced optional

~ Mexican Chicken Wings With Jalapeño ñ Cornmeal Delicious
12 Servings

2½ lbs. chicken wings (12 wings discarding wing tips
than dip wings in cornstarch - than in
egg wash made of 2 c. milk ñ 1 egg beaten
Than dip into cornmeal mix

Cormeal mix
1/3 c. flour
1/3 c. cornmeal
1 T. cumin
1½ tsps. salt
Touch of Mexican oregano powder
1½ tsps. pepper
3/4 tsp. cayenne pepper or use chili powder or both to UR taste

Remove to a greased foil lined 13 “ x 9” baking dish. Bake - uncovered 375°F. 50 to 55 minutes or till crisp n golden - turn once.
Meanwhile - in a blender or food processor – mix together dip ingredients - process till well blended. Chill till serving. Serve with wings.

Dip
2½ c. sour cream
3 c. cilantro leaves only loosely packed
6 green onions cut into 3" pieces ñ few diced stems
dash garlic granular
4 jalapeño or serrano peppers seeded or serrano as U like
3 tsps. salt or UR taste
Touch of lime juice optional
Add touch of oregano powder ñ gr. cloves for different taste.

Dips~ are many too choose from
Easy Pina Colada Sauce ~
1 c. sour cream
1 c. pina colada nonalcoholic drink mix (Coco Lopez)
1/4 c. pineapple crushed
1 T. lemon juice fresh

~Raspberry Dipping Sauce
1/2 c. Smuckers® Raspberry jam
2 T. hoisin
1 T. soy sauce
1/4 tsp. cayenne pepper
1 T. Wondra flour

~Jalapeno Ranch Dressing Dip
1 pt. Ranch Dressing UR favorite
1/4 c. cilantro leaves only chopped
1/2 jalapeño – fresh minced discard seeds or to taste
Mix all together ñ chill

Note~ add some sour cream to make thinner to drizzle on salads
For extra flavor add very little Better Than Chicken Base to this ñ can add little cream cheese.

Grilled Bacon Wrapped Shrimp
Serves 2

12 x large or jumbo shrimp
6 slices bacon cut in half
1 jalapeño see below
1 slice Monterey Jack cheese thick
1 T. paprika. Can use smoked also
1/2 to 1 T. cayenne pepper UR heat level
1⁄2 tsp. ground black pepper fresh
1⁄2 c. butter
1⁄4 c. white wine
wooden skewers soaked in water 30 minutes

Clean - devein shrimp - leaving the last section ñ tails intact.
Carefully slice each shrimp from tail to tip.
Wash - seed jalapeño - cut into thick strips to fit inside shrimp.
Cut slice of cheese into 12 small pieces.
Stuff one small piece of cheese ñ one piece of jalapeno into each shrimp.
Wrap a half slice of bacon around each shrimp.
Place shrimp on a wet skewer.
Repeat process till all shrimp have been placed on skewers.
Stir together paparika - cayenne pepper ñ black pepper together - set aside.
Using a small skillet - heat butter with white wine till butter is completely melted.
Prepare grill inside or outdoors low flame
Brush shrimp completely with melted butter ñ wine mix.
Sprinkle with seasonings.
Grill on each side till shrimp are cooked - do not over cooked.

~Grilled or Broiled Lamb Chops~

thyme leaves or dried
oregano leaves chop or dried
garlic cloves smashed
ground cumin
cayenne pepper
x virgin olive oil

Place above marinade in zip loc bag - shake - add lamb loin chops - shake well - chill 2 hours to overnight. Remove from bag - pat dry - salt ñ pepper both sides of chops.

Broil or grill outside 3 to 4 minutes per side.

Serve with 1/2 c. yogurt - 1 T. sour cream - 1 tsp. honey - 1 tsp. lemon juice ñ zest - salt ñ pepper to taste mix well.

If not serving with sauce - add lemon to marinade.


~Super Moist Chicken Broiled or on the Grill~

Prepare Chicken
1) 4½ lb. large chicken skin on deboned with 1 tsp. kosher salt all over chicken. A butcher will debone for U also.
1 hour up to 3 hours cover ñ chill chicken. Remove from fridge 10 minutes before broiling ñ baking.

Place chicken on rimmed foil lined rimmed sheet pan – placing 3 inches from broiler heat to brown ñ crisp the skin. About 10 minutes rotating the pan a few times for even browning. Remove ñ turn on oven to 250°F.
Finish by baking 25 minutes. Cut chicken into portion size pieces. Place on platter ñ enjoy.

This is very moist ñ with crispy skin.

Cucumber salad

Mayo - sour cream - apple vinegar - salt - pepper ñ garluc granular with sugar or honey to taste. Cover ñ chill well. Sometimes add a few red chile flakes.

Mayo ratio to sort cream is 3/4 to 1/4 ñ might not need milk added

Pacemakers and defibrillators: Who here also has one?

Let's see. One can pass from cancer- any fate accidents - other organs failing. Hospital or some one just shuts off the pacemaker. Dr. Snore Is the pacemaker suppose to keep beats regular all the time?

Headaches

Headaches are no fun ..for sure, feel for anyone with any sort of pain. Mine was sinus headaches that was so bad I had to wear sun glasses in the house and close the blinds. Once I got my sinus under control I was okay. Only thing that helped at the time was Excedrin , ice packs and lay still. DrSnore seems to have some good advice.

Has anyone had their lead fillings removed?

Had for many many many years silver type fillings in my a few of my teeth. Went to Mexico and had them all replace with crowns. They best thing I could've done. Work was so cheap and it's the work was fast and good so my dentist in the states, stated. Cheap like 130.00 per tooth. Lower Back Pain

If extreme pain in lower back or any part of the back - neck or it doesn't seem to be getting better should go to an Orthopedic Board Certified Dr. They will decide if a MRI is needed; which does show everything.

I had 13 screws with 5 fusions. L1 to L5 ñ 3 screws to S1 for the sciatic hip joint all done at once. 10.5 hrs surgery several years ago so glad I had it checked out ñ done. It could’ve left with lots of nerve damage ñ more. Each C1 thru C5 or L1 thru L5 and S1 ñ etc deals with certain areas, as does when you have pain tells Dr. about which area to look at.
Pain going down the legs ñ location is in one or several L area’s C deal with upper ñ S deals with lower back pain.
I was going to let it go without seeing a Dr. - decided not a good idea. Chiropractic was out of the question. I sure am glad went to Board certified orthopedic. I could've done more damage. MRI SHOWS MANY THINGS. The opening where the nerves go down through was narrowing; also plus disc's de - generating and in ascetic area arthritis. Several new options to fix the lower back pain is available plus shots are tied usually first in some cases, depends on what is found and diagnosed.

Check out Drs. Ask around who is the best. X rays and MRI IF it doesn't get better. Most certified Drs. Want a MRI FILM OR CD before you see them to be taken to your appointment. One can get one from a primary Dr. orders. Good Luck. Hope this helps. Make sure your insurance covers all procedures and Dr. of choice.

Pacemakers and defibrillators: Who here also has one?

Had a pacemaker put in because my heartbeat was going down to 37 to 39 beats per minute at night ñ I started to become extremely tired during the day. Low heartbeats for athletic people is okay. I was extremely high engery most of my life ñ walla. It happened . All went well than for 7 months of good adjustment ñ tweaking it. They decided I was using 90 % OF BETTER ñ they did something to save on battery. Now back to square one. The Dr. Stated it shouldn't made any difference. But it has. Within a half an hour of what they did ..I lost all engery couldn't make it thur a store. Anyone know anything about this. I called mfg. And the techs states It makes a difference. Guess I will have to find new Dr. I know people who ate very young with both. My heart is very good they said wirh no plaque. Just the rythmatic controller inside wore out. They gave me 2 leads because at 72 they thought the other one might go bad.

Queso Fundido with Pork Chorizo

1 lb. Chihuahua cheese* shredded
1/2 lb. pork chorizo can use up to 1 lb.
l/2 c. or 4 oz. roasted green chiles diced
flour tortillas large
salsa or taco sauce favorite

Preheat oven 425 °F.
In a large skillet - medium heat - cook chorizo - chop it up into fine pieces till completely done - like Taco Bell Meat. Remove from pan -drain fat - set aside.
Using a casserole dish - first put meat mixture in - top it off with green chiles ñ last add cheese. Bake 20 minutes - serve immediately.
Spoon desired amount over warm tortilla - roll up or warm corn chips. Have favorite salsa or taco sauce available to pour over mixture before rolling up.

Notes~Chihuahua cheese is the most desirable cheese to use for this dish. Super Walmart Supercenters carry chorizo ñ the cheese. If U like a little more kick to the dish - use hot Hatch green chiles instead of the mild green chiles or add a little habanero pepper. *Can't find the Chihuahua cheese in your local market - Muenster or white medium cheddar would be a close match.

Burrito with Bacon ñ Sweet Taters

4 eggs large
Kosher salt
black pepper
flour
6 thick slices applewood or any smoked bacon chopped
2) 10" flour tortillas
1/2 c. cheddar cheese shredded
1/3 c. roasted tomato salsa (see Game Plan note
~Alternate
Use sweet taters ñ regular taters sliced thin not to thin brush with olive oil season both sides with garlic ñ onion granular n touch of cayenne - salt ñ pepper grill or fry till tender remove ñ slice or dice to fit into burrito after adding strips of lots of bacon. Before rolling
add roasted green chiles for extra flavor

Preheat oven 300°F.
Whisk eggs in a bowl - add a pinch each of salt and pepper - beat to – set a side.
Fry bacon. Cook browned ñ crispy. Drain on paper towels - set aside. Remove all but about 2 teaspoons of bacon grease from skillet ñ set it aside.
Place tortillas in the oven to warm while cooking eggs - tortillas will be warm but still soft. Pour eggs into skillet with bacon grease - medium low heat. Let eggs sit undisturbed till eggs begin to set around the edges - 1 to 2 minutes. Push eggs from the edges into the center with spatula. Let sit again another 30 seconds - repeat pushing eggs from edges into the center every 30 seconds till they’re softly scrambled - a total cooking time of about 5 minutes.
Divide eggs between warm tortillas. Top with the cheese - fried bacon – ñ salsa. Fold short sides in ñ the bottom flaps up - roll up into burritos - serve

Cucumber salad

This two are tasty cucumbers

5 ozs. cream cheese such Philly room temperature
4 ozs. blue cheese or goats cheese room temperature
1/2 c. dried cranberries or raisins
1/2 c. nuts chop fine
4 Tbsps. unsalted butter room temperature
Kosher salt ñ freshly ground black pepper
1 T. honey
1 English cucumber sliced in half ñ hollow out any seeds

Using a medium bowl - mix well with paddle beaters – add 1st seven ingredients .
Cut cucumber in half ñ spread filling into hollowed out if any seeds. Slice crosswise into 1” pieces.

Or
4 ozs. Chevre goat cheese room temperature
1/4 c. Greek yogurt
1/4 red bell pepper seed dice plus 1/4 sliced thin for garnish
1 lemon zested
1 garlic clove
1 tsp. kosher salt
1/2 tsp. coarsely ground black pepper
1 tsp. Mediterranean oregano dried
2 tsps. mint leaves
1 English cucumber sliced into 1/2” rounds

Using blender or processor – add 1st nine ingredients in bowl ñ purée till very smooth. Remember only to use only ¼ of the bell. Place mixture to a re-sealable plastic bag - cut a small hole in the corner. Lay out cucumber circles ñ squeeze a little cheese mixture out on top of each circle. Thinly slice remaining 1/4 red bell pepper ñ Place on a platter ñ serve

Mexican Small Bites~
2 Hass Avocados sliced
2 tomatoes roma or plum ripe
1 lb. mozzarella or Goats cheese
1/2 oz. bunch of fresh basil leaves or cilantro leaves
1/4 c. x virgin olive oil
1/4 c. balsamic vinegar
salt ñ pepper to taste
See notes~

With a small knife cut the little stem end out of tomato using a serrated knife cut the tomatoes into 1/3 “ slices.
Slice goats cheese or mozzarella 1/4 “ thick.
Alternate slices avocado - tomato - goat or mozzarella with cilantro ñ basil leaves like playing cards on individual plates.
Drizzle on olive oil ñ vinegar.
Season with salt ñ pepper.
Serve with corn Chips or Italian bread or baguette or French bread

Note~like to roll the goat cheese or mozzarella chunks in little garlic ñ onion powder also. Sometimes I add fresh fried crumbled bacon crumbles over the top ñ can sprinkle very diced fine serrano chiles over top also. Oh my this doesn’t get any better.

~Pressure or Slow Cooker Barbacoa Beef for 30 YES
Makes enough meat to stuff 30 tacos can cut recipe down easily

4 chipotle peppers from a can minced - plus all the adobo sauce it sits in or less for less heat - chipotles are hot taste them first
1 bunch cilantro leaves only chopped
1 red onion peel cut into large chunks or use any
1 head garlic peeled cloves smashed
2 tsps. ground cloves
1 T. kosher salt
Juice of 4 limes
1/2 c. cider vinegar
5 to 7 lbs. beef brisket or see notes
4 to 6 c. beef or chicken stock
5 bay leaves
Serve
corn tortillas
diced onions
minced cilantro
salsa

Stir together chipotle peppers ñ their sauce - cilantro red onion - garlic - clove - salt - lime juice ñ cider vinegar - pour into a 7 qt. slow cooker if U have a food processor - can pulse till combined before adding. Place brisket on top of this mixture. Cut brisket into a few pieces if necessary to fit in slow cooker or use a pressure cooker. Add stock – cover meat ñ place bay leaves on top. Use tongs to turn meat a few times in the sauce.
Place lid on slow cooker or pressure cooker. Cook 8 to 10 hours on LOW.
Pressure cooker 60 minutes.
When finished cooking - it should shred easily with two forks.
Remove meat from slow cooker or pressure cooker to a rimmed baking sheet. Use two forks to pull meat apart. Discard all fat - if desired though if planning on frying it again before use - small fat bits are extra tasty ñ should be kept. Place shredded beef in large bowl - ladle the cooking liquid over top a few scoops at a time. Meat should hold the liquid but not swim in it - may not need to use all of the cooking liquid. Leftover liquid can be frozen in cube sized portions for other later dishes.
Serve with fresh tortillas - onion - cilantro ñ salsa.

Note~ If slow cooker is large enough to hold - double the amount of meat. Make double the recipe ñ freeze it.
Using Other Cuts of Meat~ Other than brisket - any tough roast cut will work~ shoulder or rump roast- top or bottom round. Similar cuts of pork – lamb or goat also make fine substitutes. Use over rice or how ever U want even thicken it for tacos or burrito filling.

Help needed for ideas on single serve vegetarian dish for Xmas Day.

Here are some ideas that work well for any occassion

*Try some baked squash strips or cubes with other veggies mixed through out ñ seasonings like garlic granular – salt ñ pepper - touch of basil ñ Italian seasonings inn a buttered casserole dish. Bake 450 ° F. oven – about 20 minutes ñ remove adding Gryrure cheese ñ Panko breadcrumbs with butter on top bake another 10 minutes or till melted – bubbly ñ browned.

*Eggplant breaded either fry or bake drizzle slices of eggplant with oil –garlic ñ onion granular – salt – pepper – touch of Italian seasonings both sides ñ fry or bake. Can do this also with large cut slices of steak size cauliflower about 1 or 2 inches thick the same way ñ again bake or fry Drizzle top with a nice buttered capered - wine white sauce.

*Do any casserole with eggplant making a meatless lasagna- mini dish for her.

*I know this isn’t a Christmas dish but it is so yummy ñ not bloating but very filling.. Make a cauliflower pizza crust in about 30 minutes tontal.. Mandolin the cauliflower into very thin slices. Place in a bowl with 1 egg beaten with Parmesan cheese grated – Swiss cheese or cheddar shredded – I used a Mexican crumbled goat cheese – salt – pepper - little garlic ñ onion granular – with touch of oregano – pinch of Italian seasonings in a large bowl with UR hands to mix well. U bake this on parchment paper only if U bake this - but than one must first rice instead of slice ñ steam boil the cauliflower first ñ than squeeze out excess liquid ñ than mix in other ingredients bake in oven for a crust till golden brown ñ about 40 to 45 minutes ñ remove ñ add finished toppings or DO as I do in an un oiled - unbuttered skillet. ( I use 2) Circulon skillets one a 10” ñ other is smaller 8 “ in my set to flip the crust over ñ back into the10 “ to finish it off with toppings. Once I flip the crust back into the 10” skillet – the cooked side is now facing me.. I place homemade or brought pizza sauce over top of the crust mixture above for baking – ñ more seasonings with adding green sliced olives - extremely thin slices of tomato – Pepperoni which in her case U don’t use cause she is vegetarian. But anything U want with mozzarella shredded cheese ñ a touch of either or dried sweet basil or fresh basil strips not very much ñ let it finishing cooking till all topping is melted ñ bottom will be brown. Use low heat at all times. One can add red chile flakes or very thin mushrooms. Slide onto a dish let it set a couple minutes slice ñ serve. This goes over big. If baking oven is 450 ° F. ñ takes longer. Note~ if U afraid that it might be too dark in crust color can brown it first in oven ñ place in micro a few to cook it ñ same after browning the second side. The dark color does not affect the taste IF U DON”T BURN IT. U can actually pick it up with UR fingers when first side is cooking in skillet U shall see some liquid ñ I just use a pancake turner to keep it moving around. When I flip it – does flip in one piece ñ slides back into other skillet nicely. The parm cheese ñ other cheeses bind the crust

* Make roasted Cabbage recipes with other veggies or homade buttered noodles a gratin or scallop potatoes.

* A great salad with lettuce of choices ñ spinach with cherry tomatoes sliced – artichoke hearts drained – with capers drained well – thin cucumber slices – sliced red cabbage – sliced thin green and or red peppers – pepperoncini peppers - shred some carrots in – I use cooked calamari with x large cooked cold shrimp ñ feta crumbled cheese. Make the greens really cold
Dressing made of x virgin olive oil – lemon juice – some dried oregano - salt – pepper ñ touch of Greek Seasonings.

Three Different Turkey Recipes Southwestern Styles
~A Southwestern Tequila Turkey
10 to 12 servings

5 Anaheim chiles dried stemmed seeded
3 ¾ c. chicken broth divided
4 Tbsps. or 1/2 stick unsalted butter melted
3 Tbsps. tequila
salt to UR liking
1) 14 lb. turkey giblets removed ñ reserved
1/3 c. apricot preserves
2 tsp. Mexican dried oregano crumbled
2 garlic cloves
freshly ground black pepper

Garnish with~
Dried apricots – chiles - fresh cilantro leaves or parsley chopped
Use a poultry flavor injector

Preheat oven 425°F.
Using a medium pot add anaheim chiles ñ 2 cups of chicken broth – bring to boil ñ turn off heat. Let chiles stand 5 to 10 minutes to soften.

Small glass or metal bowl mix together 3/4 cup chicken broth melted butter ñ tequila. Season with salt. Using a kitchen injector - inject mixture into thighs - breasts ñ legs of turkey. If the mixture solidifies - place bowl over a gas burner or in in micro till butter melts.
Place turkey on a rack in large roasting pan. Tuck wing tips under turkey body. Tie legs together with kitchen twine. Place giblets in the pan.

Remove chiles with their liquid to a blender. Add apricot preserves -oregano ñ garlic - process till smooth. Season with salt ñ pepper to taste.
Remove chile purée to a medium saucepan. Rub about 1 cup of chile purée all over the turkey - reserve rest for the sauce at the end -working some of it between breast ñ skin. Season turkey well with salt ñ pepper.

Add 1 cup broth to roasting pan - roast 45 minutes.
Reduce oven temperature to 350°F. Continue roasting turkey till thermometer inserted into thickest part of thigh registers 165°F. about 2 hours longer - basting every 20 minutes with drippings. Cover turkey loosely with foil if it begins to brown.

Remove turkey to a platter - reserving pan juices - allow to rest while making sauce.

Strain pan juices into a large - saucepan ñ discard any solids. Spoon fat from top of liquid and discard. Add remaining chile purée to saucepan - stir well. Boil over high heat till slightly thickened - about 10 minutes. Season with salt ñ pepper - to taste.
Garnish turkey with dried apricots - dried chiles – ñ fresh cilantro or parsley for those who don’t like cilantro . Serve with the chile purée alongside.

~Green Mole ñ Braised Deconstructed Turkey Pieces
Serves 8 to 10
Deconstructed turkey braised in a refreshing green mole provides a light ñ quick alternative to a standard Thanksgiving bird. This recipe, developed by chef Mary Sue Milliken first appeared in the I Pad edition of our November 2013 issue with the article State of Grace.

3⁄4 cup raw shelled pumpkin seeds
1½ tsp. cumin seeds
1 tsp. whole black peppercorns
3⁄4 tsp. dried Mexican oregano
6 cups roughly chopped cilantro leaves and stems
15 tomatillos, husked, washed, and roughly chopped
4 cloves garlic, roughly chopped
4 romaine lettuce leaves, roughly chopped
3 radishes medium trim tops reserved, radishes thinly sliced, for garnish
2 small serrano peppers, stemmed and roughly chopped
1 large onion, roughly chopped
Kosher salt and freshly ground black pepper, to taste
1⁄2 cup olive oil
3 cups chicken stock
1) 10 to 12 lbs. turkey, cut into 8 pieces

Heat pumpkin seeds, cumin seeds, and peppercorns in a 12” cast-iron skillet over medium-high heat until seeds begin to pop, 1 to 2 minutes; let cool slightly. Place in a spice grinder and pulse until finely ground; add oregano and set seed mixture aside. Place cilantro, tomatillos, garlic, romaine, reserved radish tops, serrano peppers, onion, and salt in a food processor. Purée into a smooth paste; set aside.
Heat half the oil in a 12 qt. saucepan over high heat. Carefully pour in paste and cook, stirring, until fragrant, about 1 minute. Whisk in stock and bring to a boil. Whisk in seed mixture and remove from heat; let cool slightly. Working in batches, transfer mole mixture to a blender and purée until smooth. Pass through a fine-mesh strainer into a bowl, pressing on and discarding solids; set aside.
Heat oven to 350°. Season turkey cut pieces with salt and pepper. Wipe out saucepan and heat remaining oil over medium-high heat. Working in batches, brown turkey on all sides, 20 to 25 minutes. Using tongs, transfer turkey pieces to a plate and set aside.
Return mole to saucepan and bring to a simmer. Add turkey cut pieces, skin side up, and partially cover with lid. Transfer to oven and bake until turkey is cooked through and a meat thermometer inserted into the thickest part of the thigh registers 165°F. 1½ to 2 hours. Garnish with radish slices for serving, if you like.

~ Chile Rubbed Turkey with Stuffing ñ Gravy
Serves 10 to 12

12 Tbsps. butter
2 lbs. ground beef
16 garlic cloves
8 ribs celery
5 carrots medium
3 bunches gr. onions with some stems chop
2 lbs. roasted beets peel roughly chopped
6 ozs. pitted kalamata olives
2 c. frozen corn or frozen
1 c. cilantro leaves chop
Kosher salt ñ freshly gr. black pepper to taste
20 dried New Mexico chiles stemmed ñ seeded
8 dried chiles de arbol stemmed
1 T. gr. cumin
1 tsp. gr. cloves
8 saltine crackers
1) 16 lb. turkey thawed neck ñ giblets reserved
1 yellow onion medium roughly chopped
1 c. flour
8 c. chicken or turkey stock

Stuffing~ Heat skillet with 4 Tbsps. butter - mediumhigh heat. Add beef – cook – stir till well browned. Finely chop1/2 the garlic - 5 ribs celery – - 3 carrots ñ gr. onions ñ stems - add to skillet - cook - sauté veggies till soft - about 25 minutes. Remove to a bowl - add beets - olives - corn ñ cilantro. Season with salt ñ pepper - remove to a 9" x 13" baking dish. Chill till ready to use.

Chile sauce~ Place both chiles in a bowl - cover with boiling water - let sit till softened - about 10 minutes. Drain - reserving 2 cups soaking liquid - remove chiles to a blender with remaining garlic - cumin - cloves - crackers – ñ 2 cups soaking liquid. Purée till smooth - set aside.
Heat oven 450°F. Place neck ñ giblets on the bottom of a large roasting pan - place turkey - breast side up - in pan. Season with salt ñ pepper - rub with remaining butter - roast till skin is golden brown - about 1 hour. Reduce oven temperature to 350° - pour chile sauce over turkey ñ keep baking - basting every 30 minutes - till an instant reads thermometer inserted into thighs reads 165° - about 2 hours. Remove turkey to a cutting board or large platter - set aside. Pour pan drippings through a fine strainer into a bowl - discard solids. Meanwhile - place stuffing in oven - cook till golden browned on top - about 30 minutes - set aside.

Make gravy~ Return 1 cup fat from drippings to roasting pan - place over 2 burners of stove - heat over medium high heat. Roughly chop remaining celery ñ carrots - add to skillet along with onion - cook – stir till soft - about 15 minutes. Add flour with some liquid from roaster but cool it first before adding flour for no lumps - stir in cooled mixture till smooth - about 5 minutes. Add stock - boil. Reduce heat to medium - cook - stirring - till gravy thickens - about 15 minutes. Pour through a fine strainer into a serving bowl - season with salt ñ pepper. Carve turkey with stuffing ñ gravy on the side.

Baked Pumpkin Empanadas
Makes 24 to 30 empanadas

Pumpkin Filling~
2 Tbsps. butter
3/4 c. dark brown sugar packed firmly
1) 15 oz. can organic pumpkin purée NOT pie filling
1 tsp. gr. cinnamon
1/8 tsp. gr. cloves
1/8 tsp. gr. nutmeg
1/8 tsp. gr. allspice
1/8 tsp. gr. ginger optional

Empanada Dough~
3 c. flour
2 tsps. baking powder
1/2 tsp. salt
1/2 c. shortening
2 eggs
1/2 c. milk
2 Tbsps. sugar

Pumpkin Filling~
Medium pan - melt - medium heat. Stir in brown sugar till it dissolves. Stir in pumpkin ñ all spices. Continue to stir over medium heat about 10 minutes. Make sure filling is not too watery - otherwise let it cook a couple more minutes.
Remove pan from heat to cool about 15 minutes - place filling in refrigerator to set 30 minutes or overnight.

Make Empanada Dough~
Mix 1st three dry ingredients. Cut in using UR hands the shortening with the dry ingredients. Add eggs - milk ñ sugar. Mix well forming the dough ñ split dough in half - wrap in plastic wrap - chill dough about 20-30 minutes. Remove 1/2 the dough - split it into 12 to 18 balls of dough. Depending on how small you want the empanadas. Usually 1 dozen per 1/2the dough. They also fit nicely on 1 large cookie sheet.

Preheat oven 350°F. Roll out dough into small round circles. Add a small dollop of filling on 1/2 the rolled out dough. Wet bottom edge of dough with water to help seal the 2 halves. Fold over dough ñ seal. Seal off the edges with a fork by pressing down along the 2 edges. Brush each empanada with egg whites - sprinkle with ñ poke each empanada with a fork to allow steam to escape while baking. Spray large cookie sheet with cooking spray - place empanadas on a cookie sheet - bake 15 to 20 minutes on medium rack. If after 15 minutes – if the bottoms of the empanadas are starting to brown - move cookie sheet to top rack - continue to bake last 5 minutes.

Note~ Can make empanadas with any preserves made ahead of time.
A sweet pastry pocket filled with your favorite homemade preserves or jam. These sweet treats are perfect with a cup of Mexican coffee before breakfast or after dinner.

Had fried alligator today Totally delicious - taste like sweet fish not like lobster more like Cheeks (fish cheeks – texture of chicken but much more tender ñ tastier.
Made by cutting alligator tail seasoned only with salt ñ pepper in strips or pieces and soaking in buttermilk totally covered 2 hours covered ñ chilled – turning once in a while.
Have deep fryer ready very hot 350 ° F. or 365 ° F. vegetable oil bringing oil up to heat each batch fried.
Remove from buttermilk directly into flour mixture of ~ all purpose flour – creole seasoning – garlic granular – cayenne pepper ñ touch of salt ñ pepper – coat each strip or piece well ñ throw in basket for deep frying 3 to 4 minutes or till golden brown.
Serve with either Remoulade Sauce UR choice or BBQ Sauce that is BBQ sauce watered down with touch of Worcestershire sauce – hot sauce or a hot chili Asian sauce just a touch will do ñ creole seasoning ñ make a touch sweet.

Jalapeño Taquitos with Chicken Slowed or Pressure Cooked

3 to 4 chicken breast frozen thawed or fresh no skin ñ bones
1/2 c. water
1 tsp. garlic granular
2 tsps. cumin powder
1/2 tsp. Mexican oregano
1/2 handful cilantro leaves chop or parsley for those who hate cilantro
1/3 c. jalapeño seeded diced to UR liking of heat
salt to taste
16 taco sized tortillas

1½ c. cheese shredded Colby Jack or Monterey Jack or Mexican blend
Or Mozzarella or mix them
8 ozs. cream cheese

Green Dressing to serve or use salsa

Add chicken - 1/2 c. water – cream cheese – jalapeño’s – garlic - salt ñ cumin - cilantro or parsley ñ Mexi oregano to crockpot or pressure cooker mix well with chicken. Cover ñ low cook 6 to 8 hours on high 3 to 4 hours or pressure cooking all in pot mix cover – pressure cook 25 to 30 minutes. Some cookers less time.
About 2 minutes before serving preheat oven 425 ° F. ñ grease a baking sheet ñ spray lightly with oil. s.

After cooking - shred meat ñ stir with contents from slow cooker – heat tortillas in micro couple seconds to soften ñ add cheese down middle of each warmed tortilla – equal amounts
Top cheese with 2 to 3 T. shredded chicken mixture - roll into tightly log shaped taquitos.

Place taquitos on sheet – bake 10 to 15 minutes or till cheese melts ñ torillas begin to brown. For crispier taquitos - place under boiler couple minutes.

~My Sauce 2 cups
1 pkg. hidden valley Buttermilk ranch mix or use regular
1 c. buttermilk or half ñ half or milk
2 tomatillos medium husked chop
1/2 c. cilantro leaves or parsley
1½ tsps. garlic chop fine or UR taste
1/2 jalapeño seeded ñ dice fine
1½ tsps. lime juice fresh ñ little lime zest
Salt to taste if needed

All into blender ñ pulse till smooth ñ creamy - use extra water if too thick 1 tablespoon at a time Cover ñ chill well before serving.

Note~cream cheese cuts down on the heat of jalapeño’s. Make these go further – cut into small portions after or before baking

~~Beef Short Ribs in Spicy Wine Sauce

Ribs
1 c. flour
1 T. lemon zest
Salt ñ pepper as usual
Little garlic granular
3 to 4 lbs. beef short ribs
2 Tbsps. cooking oil

~Spicy Wine Sauce
2 Tbsps. butter
1/2 c. red onion finely chopped
1 c. red wine
1/2 c. red wine vinegar
1/2 c. packed dark brown sugar
1/4 c. chili sauce
1 tsp. cumin powder
1/4 c. ketchup
2 Tbsps. Worcestershire sauce
1 to 2 tsp. chili powder
1/2 tsp. gr. all spice

Heat oven to 325 ° F.
Ribs~ using a shallow dish - stir together flour ñ all rib seasonings with zest. Dredge ribs thru flour mixture - coat well.
Heat oil in large skillet - brown ribs on all sides - well. Remove browned ribs to a baking dish - set aside.
Wipe out skillet with a paper towel removing excess oil. Add butter to skillet - add onions - sauté till soft. Add all remaining sauce ingredients - stir to blend.
Pour sauce over ribs in baking dish. Cover pan - bake 3½ hours or till ribs are tender.

Serves 4. This is great served with polenta - or buttered egg noodles sprinkled with chopped parsley or cilantro leaves diced.

Chicken Browned and Cooked in 25 Minutes

1) 2 lb. chicken whole rinse ñ pat dry well
2 Tbsps. olive oil
salt ñ pepper with some garlic granular all over
1½ c. water or chicken broth or mix with white wine YUM
Lemon zest all over the chicken is optional but so delicious

Rinse chicken ñ pat dry. Season with all seasonings

Place oil in pot of pressure cooker ñ press button to brown – heat oil in uncovered pressure cooker - brown chicken on all sides in hot oil. Remove chicken.

Place rack in pressure cooker ñ place browned chicken on rack. Now add lemon zest if using all over or can add inside the chicken also. Add water or broth or mix with wine around chicken.

Put lid on ñ lock into place – set to pressure cooker timer 25 minutes.

Release pressure by quick release method Be careful. I just place a tee towel over the value ñ turn to release steam for fast method.

Remove chicken to platter - pour accumulated juice into bowl ñ serve with chicken.

Notes~ Browning chicken really makes a great taste and so fast - easy.
Southwestern style chicken ~ use cumin powder – oregano – garlic onion granular – cilantro – lemon juice – oil – chili powder or use some green chili’s added

Chicken Slow Cooked or Pressure Cooked
2 to 3 lbs. chicken pieces
1) 2/3 oz. package Italian salad dressing mix* see below
4 Tbsps. melted butter (divided
1 small onion chopped
1 garlic clove chopped
1) 10½ oz. can Cream of Chicken soup
8 ozs. cream cheese
1⁄2 c. chicken broth

Place chicken pieces in crock pot ñ sprinkle Italian seasoning over chicken. Sprinkle with 2 tablespoons melted butter.
Cook on LOW 4 to 5 hours.
Melt remaining 2 tablespoons butter in a pan - sauté onion with garlic. Add soup - cream cheese - chicken broth. Stir till smooth.
Add this mixture to crock pot - cook on LOW an additional hour.

Or as above but in pressure cooker all at once – not separate pans ñ sit chicken on a rack in cooker.
Pressure cook~ 35 to 40 minutes. *Can add green roasted chiles diced or in strips in place of Italian Salad dressing as much as U want with a little cilantro leaves or parsley diced up.

Yes, pressure cooker will definitely help with all those wonderful delicious dishes like japuri or other great dishes with curry ñ etc.
those beans ñ roots cook much quicker and save time
I think you will be happier finding a pressure cooker that slow cooks Browns pressure cooks n simmers ñ the whole works. . Chef Ming Tsai has just that new pressure cooker on either HSN - QVC or one one those. Ming Tsai is a chef his brand just came out with. Hope this helps He has own web site ñ this one does it all. I will order one soon

Someone wrote and requested to post if I had them and I did. Maybe you all have some to contribute also.

Watermelon Jicama Salsa ~

3 c. watermelon cubed seedless watermelon
Juice from 1½ limes
1 c. jicama peeled diced
1/4 c. cilantro leaves chopped fresh or use flat leaf parlsey
2 Tbsps. jalapeño or seranno seeded minced or more for heat
1/2 red onion large peeled minced
Salt to taste

Enchilada Dip ñ roasted Green Chiles ~
8 ozs. cream cheese room temperature
1½ c Mexican - Colby Jack or cheddar shredded cheese divided
7 ozs. can green chiles undrained chopped or use roasted chiles fresh
1 tsp. garlic granular
1/2 tsp. chili powder
Touch of Mexican oregano powder
1/2 tsp. cumin
1/4 tsp. salt
8 ozs. or 1 chicken breast cooked dice fine 1 chicken breast or use turkey

Preheat oven 350°F.
Beat cream cheese till smooth. Add in 1 cup shredded cheese - green chiles - seasonings with meat. Beat well. Spread into a 9" pie plate. Top with remaining shredded cheese.
Bake 30 minutes or lightly browned ñ bubbly. Check in 20 minutes - if top is browning too quickly - cover with foil the last 10 minutes of baking time.
Serve hot with tortilla chips - crackers - or raw veggies use over cooked veggies

Note~can use leftover chicken in this recipe - chopped rotisserie chicken or shredded chicken from tacos both work great. Works with pork ñ chorizo but cook the beef or pork chorizo ñ drain grease first. Can sub green chiles with jalapeño’s or serrano’s diced fine or just use red crushed red pepper flakes.

Use a mandolin to cut jicama paper thin slices as the wrap like taco. wine cooked with diced tomato - gr. onion ñ few stems - diced serrano - salt cook wine about 4 minutes before adding shrimp ñ cook diced shrimp for about 1 to 2 minutes - fill jicama with shrimp wine filling mix using slotted spoon. Top with diced avocado - chop cilantro leaves or parsley - salt ñ drizzle with choice of yum yum sauce in a bottle or mayo ñ chipotle puréed or use a lime jalapeño sauce top

Make a great coleslaw made with jicama ñ jello mixed also

Mexi Bites ~
2 Hass Avocados sliced
2 tomatoes roma or plum ripe
1 lb. mozzarella or Goats cheese
½ oz. bunch of fresh basil leaves or cilantro leaves or use parsley leave
1/4 c. x virgin olive oil
1/4 c. balsamic vinegar
salt ñ pepper to taste

With a small knife cut the little stem end out of tomato using a serrated knife cut tomatoes into 1/3 “ slices.
Slice goats cheese or mozzarella 1/4 “ thick.
Alternate slices avocado - tomato - goat or mozzarella with cilantro ñ basil leaves like playing cards on individual plates.
Drizzle on olive oil with vinegar.
Season with salt - pepper to UR taste.
Serve with Italian bread or baguette (French bread or Tostidos chips.

Note~like to roll the goat cheese or mozzarella chunks in little garlic ñ onion powder for a great taste. Sometimes - I add fresh fried crumbled bacon crumbles over the top ñ can sprinkle very diced fine serrano chiles over top also. Oh my this doesn’t get any better.


Here is another

~Guacamole with Tomatillos
4 to 6 tomatillos raw about 4 medium husks removed rinse quartered
2 Tbsps. coarsely chopped cilantro leaves only fresh
2 jalapeño medium or serrano chiles de-stem quarter or to UR heat level
2 garlic cloves medium peel
1/4 white onion medium coarsely chopped or use 5 green onions and few stems
1 T. lime juice or lemon freshly squeezed plus more as needed UR choice
kosher salt to taste
touch of cumin powder OPTIONAL
2 avocado large ripe halved pitted

Optional ingredients are~ black olives diced - cheese - tomato diced fine to make to go further add sour cream.
Serve with cold julienne cut jicama - or celery or anything U like. The tomatillos plus lime or lemon n seed stuck in guacamole helps keep guacamole from turning green

Great Snacks or for Sides
~Spicy Wrapped Asparagus Serrano ñ Delights ~
olive oil to fry
asparagus spears fresh peeled
ham or bacon slices thin
serrano seeded cut
salt ñ pepper to taste optional

Peel asparagus ñ cut off tough dried ends unless U grow Ur own ñ ends
so tender – set aside.
Cut each slice of serrano in 1/3 rds lengthwise with no seeds. Wrap each peeled asparagus spear diagonally with a strip of serrano ñ very thin cut ham or use thin bacon slices – secure with toothpick ñ cut toothpick so U can roll ñ fry these in skillet.
Heat cast iron skillet with oil to sauté. Place wrapped spicy spear ñ fry till ham or bacon is crisp ñ asparagus is bright green. Remove to paper towels ñ season with salt ñ pepper if so choose.

~ Freshly Made or Leftover Papas Patties with Chile Pepper Delicious~
oil for frying
papas or taters boiled mashed or use left overs
gr. ancho chile pepper or to UR taste
paprika
pepper Jack cheese shredded
egg beaten enough to bring together
flour
1breadcrumbs Panko
salt – pepper to taste if needed
garlic ñ onion granular UR choice or both optional to taste

Large bowl – mix together- either freshly made or left over mashed papas or potatoes adding seasonings – cheese ñ fold in beaten egg (as much egg as needed to bring together ñ shape into small balls (making balls about 2 tablespoonsful each .
Small bowl mix together flour ñ breadcrumbs to coat papas patties ñ slightly flatten making thick mini pattie.

Large skillet heated – medium heat with oil.

Fry in heat skillet till golden brown both sides - remove to paper towels to drain. Serve plain or with a dip of ranch dressing or whatever U like even a verde salsa.

You'll love it simple n easy clean ups. Add wine liquids of any kind n seasonings with the meats n poultry. Chili don't even presoak beans. You'll find your own time for cooking things from what instructions states. Mine browns, Been cooking with one since I was 16

Velveeta Tex-Mex Beef ñ Potatoes

1 lb. ground beef
1 red pepper small chopped
1 onion chopped small
1) 1 ¼ oz. pkg. Taco Seasoning Mix*
1/2 c. water
4 c. frozen Southern-style hash browns (cubed only
1 pkg. 10 oz. frozen corn or less or use canned rinse well
1/2 lb. Velveeta cut into ½” cubes

Heat oven 350°F.
Brown meat with peppers ñ onions in large skillet- drain. Return to skillet.
Stir in taco mix ñ water. Add potato - corn ñ Velveeta mix well. Spoon into 13” x 9” baking dish- cover.
Bake 20 minutes stir. Bake uncovered 15 minutes or till heated through.
Notes~use UR own* Mexican blend of seasoning ñ add some jalapeño or serrano seeded ñ diced fine peppers.

New Mexican Sopapillas Authentic

4 c. flour
3 Tbsps. baking powder
2 tsps. salt
3 Tbsps. lard

Mix all ingredients together - about 5 minutes. Mix enough water to make it into a stiff dough. Let dough set 1 hour. Roll about 1/4 inch or thinner. Cut into squares. Fry in very hot oil. You might want to add a pinch of salt to dough mix so it gives them flavor

Can sprinkle with cinnamon or what ever U like powered sugar –chili pepper or just eat as is.

You might these also

Honey, lime, soy sauce and wasabi sauce to taste on any seafood or use as a dipping sauce.

Or honey, chili powder, touch of gr. cloves, hot sauce, or cayenne pepper with a tad of mesquite smoke, garlic granular and use on grilled chicken or BBQ. Squeeze touch of fresh orange juice or some zest on top the at last 5 minutes if you like. Can use any fruit. Mango puréed gave a nice taste.

Used honey, apple cider, some gr. ginger and garlic granular for leg cramps, surprisingly, it worked within minutes. Didn't measure just placed all in a shot glass, stirred, and down the hatch.

A make a honey mustard with 1/2 c. mayo, 1/4 c. mustard or to your taste, salt, 1/8 c to 1/4 c. honey, dash cayenne pepper and tad of salt. Great on used on about anything, sandwiches, or as dips. Make it to your taste.

Castillian Garlic Shrimp
Serves 4 to 6

This is the classic Spanish way of preparing shrimp. The basic principle can be applied to other shellfish or chicken. The amount of garlic is not a mistake. It's correct.

1/2 c. x virgin olive oil
6 garlic cloves medium sliced Yes that many
1 tsp. red pepper flakes
1½ lbs. shrimp - shelled and deveined - with tails on
2 tsps. sweet paprika
1/3 c. medium dry sherry or cognac
1 tsp. lemon zest finely grated
1 T. lemon juice fresh or to taste
salt ñ freshly ground black pepper
1/3 c. cilantro leaves chop or parsley leaves minced fresh

Large heavy skillet set over moderately high heat - heat the olive oil until it is hot - but not smoking. Add garlic ñ cook - stirring - till a pale golden color. Add red pepper flakes ñ shrimp - cook – stir 1 minute or till shrimp are pink ñ just firm to the touch. Sprinkle with paprika ñ cook mixture - stir 30 seconds. Add Sherry or cognac - boil mixture 30 seconds - add lemon zest - lemon juice - salt ñ pepper to taste ñ swirl pan again. Add cilantro or parsley quickly swirl to blend ñ remove to a warm serving platter.

Can use as main course or appetizers

Make fried deviled eggs

Make deviled eggs as usual and dip them in flour covering all than into beaten eggs and than into seasoned bread crumbs.

Fry in 350°F. Or little hotter each time you ready to cook them peanut oil in deep fryer or deep skillet. Do not crowd them. Remove and drain them before serving

This not black eyed peas but a New Years day meal with~

Happy New Year to all. Well.. Looks like going to a friends having in the ground whole lamb cooked. And next day
I am making a pork roast in the oven with~

Browned Pork loin roast all sides in little olive oil seasoned salt ñ pepper added sliced in angle pieces of kielbasa and cooked it in same roaster with. Pork in large roasting pan adding extremely well rinsed and drained store brought sauerkraut - 2 large onions ñ 2 celery ribs chopped and some celery leaves with 4 or 5 garlic diced - with some pearl barley maybe 1 /2 to move cups , coved with water in bake covered till extremely tender stir once in awhile and adjust seasoning ñ golf and stir turn meat at least once ...once in awhile, Star out at 425 °F. 10 minutes and turn down to 325 to 350 °F. Now covered. Bake slowly till meat falling apart will brown in color and will have the right consistency of broth . Serve over mashed taters or serve over or in bread or just munch away- when baked- the consistency is not real thick but not soupy. More like an alfredo sauce consistency a little thinner.
